Is it possible to carry a potion in a hand where I am holding a shield, not Raising the shield.

Not normally. Your character must be wielding a shield in one hand to make use of it.

There is the Nimble Shield Hand feat that changes that.

You would need Nimble Shield Hand feat from the Bastion archetype to have the shield "equiped" to do so.

If I understand the remoastered shield rules correctly, you can now "let go" of the shield and it stays strapped in your hand (so it doesn't drop) but you still have to spend an action to properly wield it afterwards (regripping the shield basically) if you want to have the hand free to grab something.
