I'm probably going to be getting the PDF of the Player Core book instead of the hard copy, but I was curious to know....
If the book (and presumably the PDF) are updated due to errata, would I have to buy the PDF all over again, or would there be a "no, you bought it once, here's the link to the errata'd version" option?

The latter. The interface even keeps track of last-downloaded and last-updated times for you.

Yes, as Fuzzy-Wuzzy correctly has said, you will be automatically given the updated version, and it will be indicated as such for you in your downloads list. Maya, this is a 1.5-year-old topic... Unless I miss something.
Yes, it is indeed old! But, it's a question I get regularly on social media whenever we release something new, and even just on a ramdom Wednesday, so I figured it would be worth bumping an official response to the top just in case someone peruses and is wondering! Normally, I'd just remove the bot spam and move on, but since this is such a common question to this day, I figured a 2 birds one stone opportunity couldn't hurt.
