What class and other game options best personify the character, Brock Sampson, from Venture Bros.?

Barbarian with feats like Adrenaline Rush, Raging Intimidation, Raging Thrower... Actually, most barbarian feats fit well. Maybe toss in Bullet Dancer for his gun use.

No guns. Guns are fruity.

The only awkward point would be weapon choice. Brick uses his fists and a hunting knife. An ape instinct barbarian will do fine for the hand to hand, but the hunting knife won't work unless you throw it before you rage.

Gymnast swashbuckler.

He's not really flashy, he's brutally efficient. Dex Fighter/martial artist would be my pick. Dex just for the unarmored look with explorers clothing. Maybe pick up wrestler too

See the unarmored thing feels like all the more reason to go animal barbarian to me. Needs a little bit of reflavoring the to ignore the polymorph aspects, but Brock is definitely a barbarian with his blood rage.

I'm fairly certain you'd need some sort of Mythic rules for Brock Samson, though a Monk/Fighter using the Dual-Class rules might work in a pinch...

Monk would be solid. Lack of rage hurts the concept, but you can got the unarmed/unarmored thing down and you can probably find some kind of throwing knife you can flurry with. Probably a strength build.

He has to rage. Brock wouldn't be Brock w/o losing his mind to bloodlust (unless there's a mechanic I'm missing w/ similar flavor).

His other martial abilities could simply come from feats/archetypes and him being so much higher level than his victims that they splat. Him going unarmored would explain also why he can get so wounded despite the level difference. Which is to say, I don't think he's so great at unarmored proficiency to warrant Monk or Animal Instinct.

Now if you wanted to make him in PF2, I think one would have to scale back expectations. A lot. Though I could see a "fantasy genre Brock" wearing armor and wielding an even bigger blade...yet definitely still raging.

Oh and you'd need Trick Driver so he can drive his sweet orange 1969 Dodge 'Hemi' Charger, Adrienne, that he's used to fatally run down dozens of The Monarch's henchmen.

Well, he's an excellent marksman even if he generally doesn't use guns: in The Incredible Mr. Brisby, Brock repeatedly stops the fall of Dr. Venture by pinning the cuff of his pants to the wall with a rivet-gun.

...in researching for this, I watched a clip of him ripping off a giant statue monster's arm, and then punching the statue in the crotch with its own giant fist.

I count that as a finisher.

Well, disarming is a swashbuckler's forte...
