so nimble shield hand says that "The hand you use to wield a shield counts as a free hand for the purposes of the Interact action." and everstand has you wield a shield using two hands. So would Both hands count as free hands while using everstand stance?
I'm not sure a situation that calls for having two free hands so I don't know that it actually matter, but I'm still curious about it

I can't think of any Interact action that would require two free hands other than drawing a 2-handed weapon ... which obviously wouldn't work with either of those feats.
But yeah, I don't see anything in the rules that would prevent you from still considering both hands free for Interact actions.
And I am not really seeing a balance problem for running it that way.

Bastion dedication was clearly created with the idea of a shield user in mind, meaning 1 shield and 1 weapon.
Having one more free hand would mean 1 more item held, or one item held and one hand ready to interact.
Talking about combat, this would mean being able to carry 2 scrolls/wands/staves/consumables rather than one ( doubling the effects of nimble shield hand ).
It would clearly be better than having 1 weapon + 1 shield ( since you'd double the feat effects ), but rather than trying to understand by how much, I'd stick with the general idea that the feat itself was meant to give sword and board users a free hand for interact purposes or to use items ( like potions or any other consumable ).
