I am going to be running a series of these demos next weekend at a game store in the hopes of getting PFS restarted there, and I had a question about the pre-gens in the back of the this demo.
Should I use those characters included in the demo itself, or the regular pre-gens available in the community use pack? My understanding is that there are errors in the characters included in the demo itself, but that those errors had been fixed in the community use pack.
So, I just want to make sure I use the right characters.

You might check with the PFS forums. You may get better or quicker answers than you get here.

I'm not sure. I just saw that you mentioned PFS and figure that they would probably have fixes for anything that needs fixes for PFS games.
Because I’m running the demo to bring people to PFS, even if the demo isn’t specific to PFS. I don’t think I explained that very well earlier.

Did a search on these boards with Torment Legacy. Found this from end of november 2019 :
And from this product page itself in may 2020 :Yes, Seelah and Valeros should not have the penalty.
"While wearing your armor, you take this penalty to Strength- and Dexterity-based skill checks, except for those that have the attack trait. If you meet the armor’s Strength threshold (see Strength below), you don’t take this penalty." CRB pg. 274
It's been corrected on the pregen sheets released in the Iconics pack.
Valeros's Acrobatics should be +5 and Athletics +7.

Yes, the pregenerated characters in the back of this adventure were published in September 2019. They have errors that were corrected in the later Community Use package.
In November 2019 Paizo published new versions of all the pregens. You can find a link to that free download here
PF2 IconicsAlso, in October, Paizo published the first set of Errata for the PF2 Core Rulebook. You can find that here
Errata Round 1In particular the Core Rulebook errata makes changes in Bulk and how it is calculated that impact all the pregenerated characters. The new versions published in November have the corrections included.
I didn't specifically check the numbers, but any differences between this set of September values and the values used in the November version would be corrections.
Use the November versions of all the pregens instead of the ones in the back of this adventure.
And
That "PF2 Iconics" link goes to the First Edition iconics document. The Second Edition one is here.

The answer is indeed Use the regular pregens.
