If you use a improvised weapon to pick up a stool in a fight. Does it use a interact action?

Yes, you need to Interact to pick up an item. Using it as an improvised weapon doesn't change anything.

Doesn't matter if it is a magic greatsword, a stool, or a stray napkin: Barring a specific exception, picking an item up (or even just drawing it from a scabbard on your belt) is an interact action that can potentially trigger an Attack of Opportunity.

Even Makeshift Strike from the Weapon Improviser archetype doesn't remove the interact action from picking up the item. It just combines the two actions into one.
