As Charlie said, the Second Edition Beginner Box rules are simplified in that options/choices and should be able to bring them just as they were into core. Some of the choices you had may have effectively been bundled together for 'convenience' or 'simplicity' but the end result is supposed to be the same.
I think there was pointed out some specific combination of race/class combination that may have produced an abnormal stat array that you can't get from Core, but I don't believe that was intended, and it might have gotten errata'd. But was the result of their trying to simply the choices, and someone probably missed a combination, they didn't think of.
This was different from the original first edition Pathfinder Beginner Box and Starfinder Beginner box that had some actual different, simplified rules, such as combined skills, ways of handling hp, or conditions that were different from the normal rules, intending to step toward the real rules.
Second edition, I believe they got feedback that people wished you didn't have to unlearn rules, and convert, to move on to core.
So the only thing you 'unlearn' is that when making a character, where in the beginner box, you effectively made one choice and got a couple things from it. That combination is simply one pair of combinations, and you could have chosen to get the first part of the choice, and potentially, had a separate choice after it, rather than the bundled (default) choice they gave you in the beginner box. Again, just additional flexibility, and additional choices.

Beginner box does have a few different rules
There’s a couple of feats that don’t appear in the core rules at all
Focus spells work completely different (they’re slotted spells you reprepare with 10 mins, rather than their own resource)
At least a couple of spells work differently (dispel magic has no counteract check iirc, flaming sphere does half damage on successful save).

The Beginner Box pregens are Ezren, Kyra, Merisiel, and Valeros.
Each has an individual 11x17 folded handout which includes a Character Sheet. The BB pregen character sheets are identical to the BB player character sheets, so they do not include any additional spaces that the players don't have on their own sheets.
