Not sure what to call it but bigger projects for inventors could mechanically be done like rituals. An example could be reenforcing a castle gate before a siege or building an airship, things that take a day or longer sometimes much much longer. Like rituals, projects could benefit or even require assistants instead of secondary caster. Unlike rituals, interruptions for longterm projects would not stop progress building an airship might take most of a year using downtime between adventures.

I really like this idea and I think the name "Big Project" or "Project" is fine.
But I don't think it should be exclusive to the Inventor. Much like how rituals can be cast by anyone with the right skills and ritual formula (schematics?) I think anyone who has enough craft skill should be able to attempt it.

For a complex project, it might require more than one skill, If one person doesn't have all the skills then it would require gettings others to help who have the right skills.
An entire AP could be built around finishing one big project or stopping a villain from finishing their big doomsday project.

more thoughts on project requirements
a simple project just needs someone with the right skills material and time to complete it.
A more complex project would require time spent on research and a successful research check before building it.
A very complex project would require research them time spent doing experiments and a successful experiment check before building it.
The most complex projects could require multiple stages each requiring separate research experiments and build time. This type of obsessive project could take a lifetime and still never be finished like Tesla's Wardenclyffe Tower.
More than any other class I think Inventors are more likely to be obsessed with their downtime.

Yet another houserule plug, but I run this by using the crafting system, and just allowing multiple crafters to work on it.
I like the ritual approach though for things that IMO shouldn't take long to craft (concentrating acid, while dangerous, doesn't take 4 days, and neither does mixing fantasy napalm) and I might integrate it into my games

Yeah, something like this could work if the party wants to something outrageous like build their own hidden lair, airship, nautilus, doomsday device, or walking clockwork dinosaur fort. Just charge an outrageous amount of gold, demand specialized and rare materials, and several months of time for construction. Proper permits and licenses are optional additional costs that can be waived in exchange for a higher DC for using unlicensed laborers and a chance of being called out later on by the authorities for not having the proper permit for the project. :)

I like this idea.
I guess instead of a Ritual we just call it a Project or maybe it really is just a Ritual.
I would think trying to come up with a homebrewed ritual or in this case non magical engineering project would be a good way to try out the research subsystem which Ive wanted to try for awhile.
Each PC could contribute even if they aren't specifically made for crafting and engineering like getting permits as mentioned, getting materials together.
Will have to explore this further, could make fun side projects during the campaign

Don't charge any gold for it that you're not going to give back to the players soon afterwards. Flavourful things shouldn't be gobbling up chunks of your wealth by level outside of an automatic bonus progression game.
Not sure how cost-effective shooting a car into space is but it has happened.

This would likely just be a GMG style subsystem or Crafting/Lore/Knowledge Skills based Rituals. Which I do think would be neat, but yeah, not tied to Inventor itself.
Think your right not really tied to the class itself. If someone wanted to play an inventor using more downtime activities an archetype similar to the Ritualist might be the way to do it. The Ritualist is one of the few if archetypes used all most completely for downtime.
