Is there any way for non-Monks to get Expert in unarmored defense?

Every class gets Expert by level 13 or so.

If you want it sooner, you might need to be a more melee-focused class, like Fighter or Barbarian or Ranger.

Bard, Cleric, Druid, Oracle, Sorcerer, Wizard, Witch get Expert

Alchemist, Barbarian, Fighter, Investigator, Ranger, Rogue, Swashbuckler get master.

Monk and Champion get legendary.

If you're looking for a way to get it at lower levels than that, there's Monk and the Animal Instinct Barbarian (who can get it with the Animal Skin Feat at 6th level), but I think that's it in terms of people who get it earlier than Champion (who get it at level 7). Everyone else gets it between 11th and 13th, I believe.

It just shows my lack of real experience with the game.
I'm looking to emulate the monks progression for proficiency in unarmored defense.

In the other game, long ago, I enjoyed multiclassing monk/cloistered cleric or ninja/cloistered cleric for a hard to hit, stealthly support caster, and I would like to mimic that experience.

Since they decoupled armor proficiency from class with an archetype, I was sure they would do something similar for unarmored defense, but I haven't found it.

Your unarmered defense goes up at the same rate as your other armor proficiencies. So a Champion will have expert Unarmed defense at level 7. As others noted above, most other classes will get it around 11 to 13. I kind of like the idea of a Champion of Irori eschewing heavy armor and taking the Martial Artist archetype.

To get monk level armor you need to be a monk. (or Champion).

That said, every class can get reasonable unarmored AC if you just raise Dex. Don't mean every class should rush into melee, but your not going to be insta-crit by a stray attack.
And every class can add stealth. Class skills are not a thing anymore.
And every class can pick up support spells. With choices for both Wis and Cha (Int for Arcane*). Not a lot of difference between the multi-class casters beyond your spell list and casting stat.
*A bit harder to pick up good blast and attack spells, as you won't have the higher level slots, ability, and be behind in DC. But a level 1 Bless spell or Air Bubble is still plenty useful at level 20.

If you want the high AC stealthy support, I suggest Champion. They come with a heal and a support reaction. You can pick up more heals from the class, or multi-class for a variety.

Or if you want more support, be a stealthy Cloistered Cleric or Stealthy divine sorcerer. Again, your not going to run into melee. But your not going to be crit on every attack either.

Bard/Occult sorcerers also have a lot of support and can be stealthy.

A dex based cloistered cleric who MCs into monk and takes crane stance will be doing pretty well defensively, especially if you pick up spells that help keep you from getting hit.

Edit: The Change domain gives you a decent defensive advanced focus spell and Irori gets Jump and Stoneskin as spells to add to their list so you will be surprisingly resistant to damage by level 8.

I will be open minded to boosting DEX not being so literal minded about recreating the character.

Oh, there is also an Armored Stealth feat. If you want to sneak in armor.

Or Monks Mountain stance. If you want to have good AC, unarmoed, and low Dex. Just note it locks your "weapon" to a strength-based punch.

Animal Barbarian with Animal Skin can also get you good "unarmoed' AC with moderate Dex.

Probably some other options as well.
