We have come upon some ruling questions in regards to what creatures glimpse of redemption can be used on.
It appears there are arguments for many sides. None I can see are official. I was hoping to get some clarification.
Contentions consists of undead, constructs, mindless, oozes and animals. Reasons for these all differ. Many of the arguments are they do know know the meaning of sin, they do not have a mind or they are programmed.
Does glimpse of redemption work on all enemies?

I think that's where the second option is really important. For anything where I don't think they would back down for that type of mental stimulus (or literally can't receive mental stimulus), I would make it trigger the secondary effect of resistance and enfeebled.
Though out of your list I would argue that non-mindless undead/constructs would absolutely be affected and animals could probably be subject to visions that would make them flinch. Mindless things I would go only the second effect.

There are no restrictions on whom this ability works, and there is no ambiguity at all in the rules themselves.
How you at your table explain how this affects mindless creatures is up to you - maybe the power of Good is so great that reality is altered and even an Ooze can feel regret - but any restrictions you place upon the ability is a houseruled nerf to the champion.

In streams by Paizo employees, the ability worked even on mindless creatures, and Jason Bulmahn very often described some “hesitations” in the creature’s action, as if they somehow gained a fleeting moment of sentience. (But I have yet to see one use the non violent option, unsurprisingly)
