So, I've read through this weapon a few time and I'm not sure I entirely understand the options available.
1: Wield it in 2 hands is nice and simple
Knife, Finesse, Sweep, 1d8 S
2: Wield it in one hand by spinning around arm. Takes an action to start spinning etc. Free-Hand Knife, Finesse, Sweep, 1d6 S
The question is can you wield it normally as a 1 handed weapon without spinning it for the free-Hand trait?

You cannot wield it as a normal one-handed weapon without spinning it. I think the text is pretty clear here.
If you want to visualize this, imagine the weapon is a hula hoop, except the outside edge is very sharp. If you try to hold it with one hand (by grasping it) you will cut your hand pretty badly. You can manipulate it with two hands by placing each hand on opposing sides of the hoop, and then moving your arms around, or you can set it spinning around something and impart on it momentum that way. If you're just walking around with it, you keep it slung over one shoulder.
Basically think of how Tira from Soul Calibur's weapon works.

I'm basically imagining an extra large chakram. I would have thought maybe with like a single dull spot on the blade to hold it by, but apparently it's too big for a single dull spot to work, so maybe it needs two. And I guess unless you're holding it by both it's too large to wield, unless you spin it around your arm.
Basically think of how Tira from Soul Calibur's weapon works.
To be fair, Tiras ring has grips so she can just wield it one-handed, even if thats among the rarer uses
