There's a difference between Play By Post (PBP) and play by email.
One advantage of PBP is the asynchronous nature of the game: People from all over the world can playing the same game without having to be awake when they want to be sleeping.
But you're right, asynchronous gaming is not at all like everyone talking together at the same time with mics and audio.
I've never heard of playing by email, but I suppose you could use "reply all" to great advantage, even if you couldn't use maps and grids.
