Anything Native American/Mesoamerican in theme I would love to see, as long as it was done respectfully and centering the cultures that inspired it.
Continuing that theme, a "Songlines" AP that takes place entirely in an aboriginal Australian setting. Crossing vast deserts and scrubland, navigating dense rain forested mountains, diving through vibrant reefs following the paths of ancient totemic animal spirits and deities that are passed down through oral tradition. Some sort of environmental themes pitting the players against ecological disasters with a supernatural spin. Dunno if there is an Australia analogue in Golarion or not.
There is, Sarusan, but it's being left un-explored in official products to give GMs a perfectly unsullied sandbox in Golarion, if they need one.

Tyrant’s Grasp volume 5 is set entirely in a new fantasy Mesoamerican nation and was killer.

Agreed! Borne by the Sun's Grace is one of my favourite installments of any AP, and the Xopatl gazetteer is possibly even better. Fist of the Ruby Phoenix is going to take us to Tian Xia, which will be awesome, and I hope our next trip outside of the Inner Sea sends us to Xopatl. I'd love to see how it's faring with the Veins of Creation restored.

I very much don't want this, because a) Australian aboriginal culture is the one that survived long enough for us to know about out of many indigenous cultures that did not, and b) many of the stories associated with aboriginal Australian mythos are supposed to be told only at specific times in specific circumstances, so it feels to me like adapting those to an AP is inherently not possible to do with an appropriate amount of respect.

First is plausible. I love the lore of the Magaambya. I have a sneaking suspicion that it might get its own Lost Omens entry (a good way to introduce the Anadi ancestry, as well as the other creature types brilliantly hinted at by now, like the bone-feathered shisks). I think centering or at least beginning a long adventure in the University could be really awesome.
Ooh! From back in May... nailed it.
