why is my email on every page of the pdfs
It's called watermarking. It prevents illegal distribution of pdfs people have bought or downloaded from Paizo (lots of other pdf distribution stores do the same thing). Paizo has also specifically asked people not to distribute the pdfs, even though they're free, but to direct other people here so they can download them themselves. Among other things so they can keep an eye on the number of people who download them.

In the case of the playtest documents, piracy is not a problem (since they are literally giving away the playtest documents). I think they personalize them for two reasons:
1) They want to count how many times the files are being downloaded, and
2) They want the downloads to be compatible with purchased PDFs when they eventually merge them into the standard purchased PDF libraries.

The fact that we're giving away something for free does not mean that we are waiving any rights granted to us by copyright law. Redistributing free PDFs is still a violation of those rights.
