Well the definition of Snark as a noun is
an imaginary animal (used to refer to someone or something that is difficult to track down).
The whole purpose seems to be it doesn't exist.
As a substitute, you could use a dancing light or will-o-wisp type image. Just a ball of light, no one can make it out type of idea. Half-Life also appears to have an enemy called the Snark, which appears to be a one eyed insect creature.

There's a description of one you could try plugging into Google on an image search, but I don't know that any art actually exists since it appeared in the backmatter of the Ironfang AP and doesn't seem to have received an art piece.

Yeah, I have the adventure path. I've tried google extensively using all my skill (and I am very good at finding things) to no avail. Nothing even came close, even searching for avian/bat hybrid creatures.
At this point, I am looking into talking one of my artistic-minded friends to sketch something out that I can work with. Then, depending on satisfaction, I am going to possibly commission someone to bring the illustration into existence.

I actually found something that is ... close enough to work, though I wanted more of a mammalian head on the creature.
