When i take over a host it says

"You keep your Intelligence, Wisdom, Charisma, level, class, base attack bonus, base save bonuses, alignment, and mental abilities"

as for the physical body I take over it says

"The body retains its Strength, Dexterity, Constitution, hit points, natural abilities, and automatic abilities"

So my question is, if the body I take over has a Strength of 30 but my characters Strength is 5, which one do I get? For example if I use a melee touch attack spell what would my Modifier be?

You use the body's physical abilities. You would use your own base attack but add the body's Str mod. Similarly, you'd use your base saves, but you'd use the body's Dex or Con modifier for Ref and Fort saves.

You keep all *knowledge* related data - skill points, class levels, class-based saving throw modifiers, feats, etc.

You ONLY replace the purely body-related data- str, dex, con, and the modifiers of direct derivatives, such as ranged and melee attack modifiers, AC bonuses, natural attacks, breath weapons, and the like.

In case it's still unclear: in this case, you would use the Strength 30.
