Elemental Body I - IV

If I cast Elemental Body IV to become a Medium (and not Huge) Elemental (size granted with Elemental Body II) would I get:

1- Immunity to bleed damage, critical hits, and sneak attacks; DR 5/— ?

2- Bonuses as per Elemental Body IV or Elemental Body II?

I've seen many discussions about it, but with no clear answers.

Elemental Body IV specifically says you turn into a Huge Elemental. If you want to turn into a Medium Elemental, you specifically need to cast Elemental Body II.

Size bonus is based on which size you choose so would say as #2. Bit because using 4 would get the stuff you listed in #1.

What about natural armor bonus? Does it follow the "size rule"?

since the natural armor amount is lumped in with the size yes natural armor gained depends on your size chosen.
