Is it the impossible dream? A crit fishing fighter wielding two weapons, pouncing (more than once per day) preferably by level 8-10. Coordinated Charge seems like the only good way to do this, but it requires teamwork.
To get the maximum benefit typically you'd look at a feat chain something like this: TWF; ITWF; GTWF; Double Slice; Weapon Trick; Vital Strike; Improved Vital Strike; Possessed Hand; Hand's Autonomy at lvl 11.
My impression is that Paizo gave us several ways to get pounce with natural attacks, but very few ways with two weapons that have a crit range lowerr than 20. My goal is to build a crit fisher with pounce, wielding wakizashis, by levels 8-10. Is there hope?

I would probably do a build with a mount and a sohei dip to get mounted skirmisher.
If you need fighter, you can get a mount with nature soul, animal ally and boon companion.
A pure sohei could be built around the mount above and using the waveblade.
Or you could do a cavalier, paladin, or hunter for the mount with a 1 level dip into sohei.

This won't help with Bonus feats, but a BEASTMORPH Alchemist can get Pounce at level 10 while their Mutagen is on (actual pounce, and it doesn't require you to change shape). It's only 1/day, but it lasts for 100 minutes.
A 1 level dip into MASTER CHYMIST lets you use your Mutagen 3/day.
So by level 11 you get 300 minutes (5 hours) of pounce per day.
Also I'm curious, if you're Pouncing why do you need Vital Strike?

The mobile fighter archetype gives you something close at level 11. You have to sacrifice your full BAB main hand attack, but that's less of an issue when you dual-wield - you lose a lower percentage of your damage output. It's straightforward, possible all day and works without charge. Pounce is better in some regards, but worse in others.

FYI
Use Kukri instead of wakizashis. Take the feat you would have spent on the exotic weapon proficiency and use it for Advanced Weapon Training: Focused Weapon. By 10th level you'll have a base damage of 1d8, eventually increasing to 2d6.
The vast majority of your damage comes from static damage bonuses. It's not worth spending a feat to increase base weapon damage by 1 point, so not much reason to worry about it prior to 9th level, when you can use Weapon Training II to grab focused Weapon and your regular feat to grab Trained Grace. At10th level you should be have Improved Critical and a weapon profile of (1d8+x/15-20/x2). It you've managed to pick up your Dueling Gloves and are using Trained Grace, you should have a +8 static damage modifier from Weapon Training in addition to all your other static damage modifiers.

Crit-fishing fighter or Fighter? For the later, the closest thing to pounce is indeed Coordinated Charge with the Fighter’s Tactics AWT (earliest at 10th level). Possibly with your own familiar (Eldritch Guardian archetype, Wasp Familiar or Familiar Bond feat).
If it's merely a pure martial you want, options include Avenger Vigilante (12th level), Barbarian (10th level), Metamorph Alchemist (9th level, could wield 4 weapons).
unMonk with Ascetic Style (5th level but starts with very short range) would also be possible, but wouldn't want to actually use multiple weapons.

One can also build a Brawler who uses Outslug Style with a Polearm (Fauchard preferred) with weapon modifications to put it in the "close" weapon group. By level 8 you can take a 10' step then flurry with an 18-20 weapon with 15' of reach.
It's not twf, crit-fishing and pounce, but it's fairly close to all of those things.

I did think about going into that, but it seemed like a lot to put in a post that was only maybe helpful to the OP.
