Does any material exist discussing what happens when outsiders change alignment along the Law/Chaos axis but remain just as good/evil as they were before? I ask because I'm interested in using a Kuribu Angel that actively leaves the holy site it was summoned to protect to hunt down completely unrelated evildoers as a plot element. I am very specifically not writing it as having fallen into evil, but am wondering if this would shift it away from Law, what the consequences of that would be and if something similar has happened elsewhere.

While an outsider might change their alignment, they cannot change their type that lists them as [good], [evil], [law], and/or [chaos]. I think there are some named AP outsiders that have changed alignments, but retain their subtype.
Note that a good demon (like a redeemed succubus) still carries the [evil] subtype. They are still hurt by Smite Evil. And Order's Wrath still hurts due to having the [chaos] tag.
What happens to the critter has two parts: how the critter perceives others, and how others perceive it. The critter's change in alignment means it finds old friends are no longer friends, and others who were not friends become friends. Their may also be consequences to class based abilities. As to what others perceive, if the critter has a job to do and no longer does it, that will be noticed eventually. What happens depends on what someone else thinks of the abandonment (or corruption per your OP) of the job.
For the case of a protector abandoning the post to hunt down evil, that is an issue of keeping the oath to protect. They should always be near in order to protect. They cannot hunt others unless they remain close. [How close or near to the site is a GM call, but should be within easy and quick travel for the critter.]
The allowance made for abandonment is probably larger for a protector who is chaotic, but also smaller for lawful ones that assign the protector. Both could apply.

Wrath of the Righteous would indicate otherwise (at least in some cases). Arueshalae only has the [Chaotic] subtype when you first meet her and if you complete her redemption, she gains the [Good] subtype.

In fairness, Arueshalae has a unique ability that removed the evil subtype on her path to redemption. Most creatures don't lose subtypes when they change alignments - those are part of what they are, not who, though friendly deities are probably willing to help out when convinced of a changing outsider's desires.

Arathuziel from the redemption engine novel used to be a devil in the novel line, and changed into an angel as he became LG.. so changeing alignment most definitely CAN change what outsiders are.

I think it's because WHAT an outsider is, is absolutely a function of their alignment. They are embodiments of their alignment as much as they are physical beings. Which is why alignment changes for them are so dramatic, they are literally rewriting their entire being.
