Small Barbarian with Giant Instinct

So to begin with, the Giant Instinct lets any Small or Medium creature wield a weapon built for a Large creature, that's all fine. BUT if you pick up Giant's Stature, it says you become Large regardless of whether you were Small or Medium before and also that your equipment grows with you. So if a Small barbarian grows two size categories to Large, does the weapon also grow two size categories to Gargantuan? Whereas a Medium creature would only grow one size category and would only end up with a Huge weapon?

Long Story Short: since the only things the size increase give you are increased reach for your weapon and the ability to stand on multiple squares at once your question is pretty much irrelevant

no matter if or how much the size of the weapon changes, that is all that changes - so it is pretty much up to your flavor and the gm how this plays out, but in gameplay terms it simply doesn't matter

It's still bigger than you are, you're still clumsy, and you still need it to get the full benefit from Giant Instinct rage.
