For my new character I was thinking of a LN whip specialized Kuthite warpriest. Thing is, being LN (no evil allowed in my DM's campaign), I wanted to focus more on using pain and torture to extract information. Don't you think it's a little more evil than intended?
I was thinking slashing grace + merciful enchantment to make them pass out, then torture all the information I can from them.

Torture is evil in my opinion, but you can make it work if the priest does it only when necessary, stops as soon as he has obtained the required info, and most importantly does not feel any pleasure in it.
Regarding the build, if you want to go along the non-lethal route, I suggest strength-based with Proselytizer archetype and spiked chain; Half-Orc for Sacred Tattoo + Fate's Favored, +2 to Intimidate and Human favored class bonus; Enforcer at 1st level and Hurtful at 3rd.

There are times when torturing is for the greater good or in your case to uphold the laws or beliefs of your character. As long as it is done out of necessity you should be fine but it is indeed a very thin line to walk.
The real issue is Zon-Kuthon has to be some of the motivation behind your beliefs and that is a malicious god. You could be a believer of the techniques to extract information or have something to do with Dou-bral.

I actually just made my own whip wielding warpriest of Zon-Kuthon for Pathfinder Society. He's neutral instead of evil alignment, because he just wants to hurt himself, not other people. He's somewhat depressed and confused after being abandoned by the last god he worshiped (see PFS adventure 9-01: The Cost of Enlightenment), so pain makes him feel alive. He'll hurt others in combat, if necessary, but he specializes in non-lethal damage and scaring people, only killing when truly necessary. So he's actually less murderhobo-ish than many Society characters.
I went Enforcer from level 1, totally strength based, not bothering with dex or finesse, so no need for slashing grace. There's a ZK religion trait in Inner Sea Gods that gives +2 to intimidate, on top of the half-orc racial bonus, and of course, using Sacred Tattoo with Fate's Favored, and the alternate racial for whip proficiency. I'm doing the human favored class bonus every level to get bonus combat feats. Here's what I'm thinking for feats through the low levels:
1 - Enforcer
1 - Weapon Focus: Whip (warpriest bonus feat)
3 - Intimidating Prowess
3 - Whip Mastery (warpriest bonus feat)
5 - Dazzling Display
6 - Improved Whip Mastery (warpriest bonus feat)
6 - Shatter Defenses (favored class bonus feat)
What were you thinking for blessings? I really like Death for the intimidation bonus and flavor, and the level 10 ability is awesome. It was a tough call between Darkness and Destruction for the second one.
