Hello,
how does the human fcb works with an amnesiac? Are those seperate spells that dont count into the amnesiac slot calculation?
e.g
At level 8 I'd know 2 level 3 spells without my fcb, so i'd have 1 known spell and 1 amnesiac slo and 1 fixed spell through my fcb.
Or would I know 3 level 3 spell which would be 2 spells known and 1 amnesiac slot (and could be changed to any spell I want, if I could cast level 5 spells?)

The archetype is very explicit that only the base spells known from the table are used for the calculation. Your human FCB spells known are bonus and don't affect how many amnesia slots get. All amnesiacs essentially get the same number at the same levels no matter what.
Aside from level 5 where you get quite a few, it works out to 1-2 slots on average.
Each day, for each spell level the amnesiac can cast, she retains a number of spells known equal to half the number listed on Table 1–8, rounded up. These spells must be selected from spells the amnesiac knew the previous day (including any spells she remembered using spell recollection; see below). The remainder of her spells known (half the number on Table 1–8, rounded down) become amnesia slots, which the amnesiac can use with her spell recollection ability (see below).
