Howdy,
I'm one of those DM's who uses a lot of pre-made stuff due to time limitations, so I don't know the rules as well as I used to.
Can you all help me create an amazing quarterstaff user? It doesn't need to be a warrior necessarily, and there is no limit on level .... I just want to see an amazing wielder of a quarterstaff, doing more damage than one might expect, multiple-attacks, being great at disarming, etc.

Were you wanting to use magic, or just straight up beat-stick? There is another active thread on trying to run an efficient non-mage, but if you were wanting magic, a Staff Magus is a hard thing to ignore.

A Goliath Druid casting Shillelagh might be an interesting way to go an extended Shillelagh lasts long enough to be a pre combat buff, I'm not sure if it stacks with Enlarge person though :/ possibly if you enlarged and then cast Shillelagh it would stack but then thats two turns of combat :/
said Build might even justify a a Vital Strike Druid though, I'm not sure.
You could still cast since casting druids don't require too much investment beyond Nature Spell.
You might even simply consider using a large Quarterstaff even when you're only medium.
Dunno it just feels like Shillelagh would be a fun and a shame to miss.

Well, I mean, a staff magus is one way to go. Magi (maguses?) are really powerful in their own right, and the staff magus has you whipping about, magus-ing with a staff. They don't lose a whole lot when they pick up the archetype, so it still works well.
My friend has also come up with a staff build. I don't remember all the details, but it was a nagaji scaled-fist monk centered around a quarter staff. Pragmatic activator +UMD meant he could use a wand of shelaligh, and 18 str +power attack +flurry of blows makes it actually not that bad.

If you are looking for simple (since you indicated rules familiarity might be an issue), rangers and slayers are fairly good.
They both get TWF feats without needing high dex, which makes them perfect for double weapons (which are str based for the most part).
If you want a simple method for multiple attacks... cornugon smash+hurtful are great for melee classes in general. That is 'free action intimidation on power attack' and 'swift action attack on an intimidated enemy. This allows you to get two attack off on an enemy even after a move (and this should be 2 handed, as compared to the TWF of their full attacks... so to BIG attacks).
...so... yeah. Three feats, two of which (power attack and hurtful) can be taken as early as level 1 with humans, and the last at level 6-7. Plenty of room for disarm stuff.
overall... not fancy, but it isn't anything complicated. If your players are not familiar with that feat combo, they may wish to copy it if they are melee characters.

If the Slayer/Ranger route interests you but you want casting, you could go for a Nature's Fang druid. Two-weapon fight w/ a quarterstaff & throw on Shillelagh for 2d6 on each end. Take the Crocodile domain & Accomplished Sneak Attacker for sneak attack fun. Add Mauler to the Dwarf Caiman familiar for a flank buddy.
