how would it see? what would it use to see with what it is available?

You'd have to fall back on other senses such as sound and scent (requiring perception checks or get an evolution such as tremorsense.

Nothing however has the range of sight, and as a result an eidolon without eyes is going to be severely hampered.

Wouldn't this require carving out the eyes of the eidolon....? It's not exactly like there is an "eyeless" evolution.

So you'd either have to butcher it, houserule it, or put "not-eyes" that function identically to eyes on it.

You don't actually need eyes to see in PF (undead and elementals are the most prominent, but not the only example).

This is actually true. So an eyeless Eidolon would work with no evolutions expended.

Thanks for using Pathfinder logic rather than real life logic.
