Greetings all.
As a GM, I've just started to add 3rd party material into my games (especially after getting the rogue genius pdf bundle). While I'd love to start looking at more things I can add for my players - I'm currently finding the sheer amount of 3rd party content out there to be a bit overwhelming. As such, I'd like to hear what 3rd party books/content other people find to be especially enjoyable in their games, to get a a better idea of what to look into myself.
Some of the things I'm especially interested in finding content for:
-More Eidolons for the Unchained Summoner. Yes, I'm the pesky GM who demands summoners in my games be unchained. While I love the fact that unchained eidolons actually have a theme (as opposed to a formless blob of whatever the most powerful options are), I understand that the existing subtypes are rather... limited. As such, I'd love to know if there's any good 3rd party material that provides additional subtypes for the unchained eidolons.
-Archetypes/Ki Powers for Unchained Monk. I've already worked with one of my players to make simple updates for various archetypes to work with the unchained monk (as said player nearly always plays monks), but I'd really like to have more options to provide to the player.
-Antipaladin/Ninja/Samurai. Somehow, these alternate classes seem to be especially popular within my group, appearing in nearly every campaign - but as alternate classes they seem to have received fairly little official support. So I'd love more stuff for them.
-Vigilante. Possibly one of my favorite new classes, though I'd really like to have more social talents available just so that renown had less importance.
-Kobolds. Because I've become associated with them within my group & am currently running a Kobold Campaign.

You seems to be looking player oriented material, I don't know much about it.
However, for a GM a strongly recommend Dungeon, wilderness and urban dressing by raging swan, they are made 100% of pure win material. Everything else from raging swan is also great, Scion of evil, Tribes most foul, miscellany random encounter, etc, etc.
Frog god games have a huge collection of sand-box adventures.
The advanced bestiary by green ronin if you want to give nasty surprises to your players.
101 hazards and disasters by rite publishing is a personal favorite.
And if you happen to want a underwater campaign then alluria press covered all the basis for it.

2. Everyman Unchained: Monk Archetypes I and Everyman Unchained: Monk Archetypes II is also just what you ask for.
3. Everyman Unchained: Unchained Cunning, has a wealth of options for ninjas and rogues.
4. Legendary Vigilantes
The link here is for the thread discussing the open playtest document for Legendary Games Legendary Vigilantes; the released version will be on Paizo soon (this coming week, I think).
5. 100% Crunch: Kobolds by Raging Swan Press has a bunch of kobold stat blocks from CRs 1/6 – 5.

While I didn't mention it in the first post, bestiary options are certainly welcome to spice up combat. Especially considering one of my players is a GM who recognizes nearly everything I throw at him on sight.
For kobolds, I'm currently more interested in finding more options for players, rather than stat blocks. While they're currently enjoying the campaign, some of my players are having a bit of coping with the idea of playing a weak race - so I'd like to be able to provide them with new options to play around with.
Everything provided so far looks good, I already can't wait to get the opportunity to look into some of these more.

Vigilantes of Skybourne has a bunch of vigilante materials, including new social talents. You'll get the most out of it if you also have Spheres of Power, which is itself an awesome addition to any Pathfinder game.
Daw already mentioned Akashic Mysteries, but it's worth mentioning again because you brought up wanting some unique and unpredictable monsters to throw at your experienced players, and Akashic Mysteries includes several new monsters, called daeva, that are interesting, challenging, and are inherently customizable and adaptable, so they can surprise a group even if they've encountered a particular monster before.
Another great monster resource is the Advanced Bestiary, which has cool monsters and tons of templates for putting a unique twist on a classic critter.
The Advanced Races Compendium has a ton pf support for cool, new, iconic player races, including a great section on kobolds.

I would highly recommend anything by Rogue Genius Games.
I think you might be better served by asking for 3pp content for specific things when you decide you want to branch out for that particular topic. For example, let's say that in 2 weeks you decide that you find out that your character will be able to take Leadership, but your GM doesn't really like the feat and you don't want to deal with that many NPCs. Maybe you are looking for other options. Or you have a wizard who wants to dip a bit into rogue, but you don't want to actually multiclass. Those options are available.

As far as I remember, Path of War: Expanded has an archetype compatible with both chained and unchained monks. Either way, I immensely recommend everything by Dreamscarred Press as their content tends to be balls to the wall awesome, even if not quite what you listed. They are widely considered the best 3pp publisher for a very good reason.

For more customized monsters, check out this link for Enhanced Aberrations, Enhanced Fey, and Enhanced Undead. Each of those three books allows a GM to highly customize those particular creatures.

Good news, Legendary Vigilantes is out at Paizo!
It has a few new social talents, such as
Friend of a Friend: Lets the party use your diplomacy check to keep them from messing up a well laid plan.
Gist of it: Hey, wanna fake knowing a language?
Keep 'em Talking: Every stalling tactic with the ability to possibly nab some extra info.
Magical Inventor: Master Craftsman feat with a lot of expanded use (requires a vigilante talent though).
Skill Master: Everyone needs signature skill, right?
Skill Specialty: A companion talent to the Legendary Rogue.
Superficial Knowledge: You have an approximate knowledge of many things.
That's just the social talents, it has a ton more content in it too! And of course, the Legendary Villains: Vigilante playtest is also still going on in case you need more vigilante content for your games.

For Samurai, well Asian archetypes for many classes, races, feats, traits, many modules look at Rite Publishing Kaidan setting of Japanese Horror (PFRPG) and for whatever reason these 2 products also belong to Kaidan, but are listed elsewhere: #30 Haunts for Kaidan and Way of the Samurai (PFRPG) - this latter one has 4 archetypes for samurai (4 samurai orders), as well as yojimbo (ranger archetype), yamabushi (paladin archetype), teppou bushi (gunslinger archetype) and onmyoji (wizard archetype), plus 3 prestige classes. Plus rules for creating a custom samurai clan (based on the GMG city stat block). Plus a mapped town location, NPCs, sample samurai clan, cursed magic item.
The Gamemaster's Guide to Kaidan will be going to print soon and released to public afterwards (getting 2 more illustrations and a map before it goes to print, already edited).

Hello again.
After grabbing (and greatly enjoying) many of the pdfs suggested here, I've come up with a few more things I'm looking to add to my games. Once again, any help in finding good third party content is greatly appreciated.
Some of the things I'm looking for:
-Additional Cleric Domains/Subdomains. As I'm currently building a (rather large) pantheon for my homebrew setting - the limited amount of existing domains has lead to a large amount of repetition in what I've done so far. As such, I'd love to have more options to grant to my players to help vary clerics of different deities.
-Witch patrons. After reading Otherworldly Invocations by Necromancers of the Northwest - I've fallen in love with the idea of giving witches an option to select patrons with a bit more personality and flavor to them. Unfortunately, other than that that book and the third volume of Advanced Arcana , I'm having trouble finding any other 3rd party material like it.
-PC Races. While I'm still going through and adding bits of the Advanced Races Compendium to my setting, I have to wonder what other good options for expanding PC Races are out there. Specifically, I'm looking for additional races which are easily recognizable to players as being drawn from common fantasy - and am interested to know if there are any good/balanced Tiny or Large sized races out there.
-More content for the Inscribe Rune and/or Inscribe Magical Tattoo feats. While I love the concept behind these feats & want to make runes a bigger part of my setting, the existing options for magical tattoos and runes seem rather... underwhelming.

I'd also suggest (if you're into it) Freeport: The City of Adventure for the Pathfinder RPG by Green Ronin Publishing. Although it may not quite what you're looking for, it's one of my personal favorite coastal city campaign settings.
Which says a lot, because it is my only (in print) 3rd party product, as I mostly overlook 3rd parties, because I don't quite enjoy them as much as say, Paizo's official products.
It also contains a huge amount of material if you want to overlook the setting fluff.
Also, kudos to Green Ronin for being my favorite 3rd party!

I'm a little late to the party, and the product I have to recommend isn't out yet, but when it does come you should check out the Talented Bestiary: it lets you break monsters down to a point system and rebuild them to fit any CR. Sounds a lot like your players will never know what hit them.

I have to admit, I'm anxious to see what you think of the first two. Both are people I brought into the business, and I'm sure they're going to be anxious to receive their first review from you. Hopefully it'll be better than mine (which TOTALLY isn't N. Jolly canon), but I know you'll be fair however you review them. I'm just being a bit of a proud parent here.

Regarding your wish for more players options to help vary clerics of different deities, you might check out New Paths 9: The Priest from Kobold Press
The Priest is a low BAB, no armor, full-caster with an interesting casting mechanic, robed holy man with unique divine abilities class which offers a nice alternative to standard clerics. There's even an archetype called the Chosen of Nature who protects and preserves the natural world :)
