I'd call it a combat maneuver that provokes an attack of opportunity. It's a fun idea, but you're relying on a single-target save-or-die that includes two points of failure: whatever roll you decide to use to administer the mutagen, and then the Fort save to resist the effects. I've toyed with the idea of mutagen + beguiling gift myself, but the problem of two saves vs. a single target remains. A neat and flavorful idea, but it always struck me as a sub-optimal one. Best of luck to you in pulling it off though!

It would be a GM call whether injecting counts as drinking. If it does then it could also be administered through an Iron Cobra bite. They are available in gauntlet form too. Poisoner's Gloves are a cheaper option.

It's a full round action to give an unconscious ally a potion. I would work the idea of force feeding a potion to be the same, requiring a helpless target.
While it says that you give the unconscious character the potion carefully (generally to avoid any of it getting into their lungs), I imagine at least some similar effort needs to be put into someone who is actively resisting.

So I'm looking at maybe creating an Alchemist who carries around a mutagen as a last resort. My question is, can I force an opponent to drink it in combat? If so, what sort of maneuver would that be? The ability to nauseate an opponent that is too close for comfort is tempting.
You'd have to grapple, pin, AND THEN take a full round action to force the potion down with another grapple check.
Don't ask me for sources on this...the rules don't address it directly in any place I've seen. I'm extrapolating from what's available.
