You're pretty much stuck with it unless the archetype specifically says otherwise, like the Qinggong Monk.
Even that is not really quitting, you are still a Qinggong Monk, you cant then take Monk 1 afterwards to pick up something you previously traded away or double up on your save bonuses again.
I think that is a good analogy actually, to quit an archetype would be the same as saying you are taking the next three levels as Fighter Archetype X, Y and Z each with an alternate class ability that leaves weapon training untouched but granted at different levels so that you could stack up the bonuses or cherry picking archetypes that would give you a unique benefit at the chosen level when the trade off came earlier or later and you wont be touching those levels.

What we really need is for the OP to clarify his question.
Did you mean to ask can you remove the entire archetype from your character? Yes you may, using retraining rules. You will lose all benefit from the archetype and go back to the basic version of the class.
If you meant, can I stop gaining the benefits/drawbacks of the archetype and go back to gaining the standard progression of things from the base class? No. Archetypes are balanced as a whole, if you were able to pick and choose what things you wanted and didn't want to take it wouldn't be balanced. The only exception of this is the Qinggong monk, which explicitly states you can choose what to replace.
