So, I have a Samurai in PFS, and she's pretty fun. I made a half-orc for flavor, but a human is probably your best bet.
If you don't want to deal with the mounted combat thing (and a lot of people don't) there is exactly ONE archetype for samurai called the sword saint. They trade in their mount for the ability to Iaijutsu. Basically you can get bonus damage on one target that you challenged equal to a rogue's sneak attack bonus (but it isn't precision damage). So two-handing your katana+power attack+boatload of D6s. The extra damage doesn't double on a crit, but I have managed to pull out 94 damage with a crit iaijutsu before (at level 8)
My person is a ronin order (or Knight Errant) which is good for shoring up your rather weak will defense by letting you roll again the following round on some will saves. It also gives you knowledge (local) as a class skill, which is a pretty good class skill to have.
The only downside of the build is that you are slow at 20ft, so I'd recommend some boots of striding and springing or something. Also you are more of a DPR kind of person, as generally you will be in the thick of things and not using a shield, so I recommend you invest in the toughness feats and get a belt of Str/Con, as I've found it hard to not go down some games.
In general, the feats I recommend:
-Weapon Focus, Weapon specilization (Katana) (You can pick this up thanks to the Samurai's level 3 class ability)
-Toughness
-Furious Focus (this one is pretty useful for you, as Iaijutsu is a full round action (later a standard) so you will generally only be making one attack around when Iaijutsuing)
-Iron Will (Bad will defense is the worst)
-Improved critical (Katana) (once you are at level 9 or above.)

Consider Dwarf for the Cavalier FCB for extra damage on challenge. Human works better for TWF due to feats and bonus to STR but will deal less damage longterm.
The best orders are those that grant static to hit modifiers such as Order of the Dragon (you count as your own ally) or order of the Green (yay hippie Samurai).
Archery sucks for Samurai's as Challenge is limited to Range Weapons.
Good Feats to choose: Chain Challenge, Wil save boosters, Weapon Focus, Specialization, Power Attack, Improved Critical. If you use Naginata Combat Reflexes if you go for Wakizashi then go for TwF feats (I'd do that with the above stats as you can take 18 STR 17 Dex making TWF super good.)
Also as you get free quick draw with Wakizashi you can do multi mode fighting. First use Naginata to get some AoO or attack two handed while closing. Then when you're up close and personal drop naginata, draw wakizashis activate challenge and remove opposing miniature from the map.
Don't dip. Challenge progression is worth more than dips for Samuarais.

I'd recommend putting your 18 into strength, put a 16 or 17 into constitution, then distribute your other stats as you see fit. The regular Samurai class is the best way to be a samurai starting at level 1- other classes require feats to get the weapon proficiencies. Actually, you could do pretty well with two-weapon fighting, going classic samurai with a katana in your primary hand and a wakizashi in your off-hand. Alternatively, you could be an amazing mounted archer. Depending on how you read the mounted archery feat, you could be taking -2 to hit enemies while your mount is running (instead of -4 with either the feat or the class feature, or -8 for having neither the feat nor class feature).

Hmm. Elven druid can do archery, can use scimitar or elven curveblade as katana (or flame blade as ancestral magic katana), branched spear as, well, spear, comes with mount. Can even pay lip service to the "samurai wore lacquered wood/bamboo as armor!" trope.
And I think I actually got a sneaky build for wizard/arcanist/sorcerer/witch to pull off the wandering samurai with his super speshull magical ancestral blade trope without much of a hick.
