Is there a way to either:
- pick what species you turn into via reincarnate? Perhaps through some other magic or ability.
And/or
- is there a way to legitimately change oneself from one species to another? Poly any object won't work because it only changes the superficial. Wish would probably do it, but anything else? Limited wish maybe?
The general idea of this is to reincarnate, but into a species you want to be.
Thoughts?

Is there a way easer than accessing a 9th level spell?
Not really. Changing one's species is pretty extreme. I've actually made a character (non-PFS, as she would not be legal due to the ARG restrictions in PFS) sort of with the idea that she is not the species she started as. She's human, and I made her as a human EXCEPT... I gave her Racial Heritage (Catfolk) and Catfolk Exemplar. The idea is that she is a reincarnated catfolk and that former heritage is still a part of her, even though she's no longer a catfolk. She could get a Wish or Miracle to return to her former self, but she doesn't want to. That was her old life, and now this is her new life.

Salve of the Second Chance gives you two rolls on the reincarnate table. Fairly minor cost by the time you can afford to repeatedly kill yourself and come back.

Reincarnating Druid gets it at level 5, with a week cooldown you can easily change races fairly easily.
Just fear the Death effects
Yeah, I actually considered giving my above mentioned character 5 levels of reincarnated druid just to make her somewhat 'immortal' but I didn't just cause that cuts into her main concept as a feral hunter shapeshifter. Having her shapeshifting abilities so far behind hurts... even with the feat Shaping Focus, she still will never hit 'at-will' :(

I apologize if it's already been mentioned but if 3rd party stuff is okay at your table, then Necromancers of the Northwest did release this recently: The Deluxe Guide to Reincarnation
It covers quite a few options beyond the basic spell as listed in the Core Rulebook.

The issue with death effects (as a Reincarnated Druid) can technically be fixed with levels in the Living Monolith prestige class. You'd need to go all the way to 10th level to pick up Ageless Stone, but it renders you immune to death effects. At that point, you just need to avoid dying during the 7-day window between reincarnations.
