Does an improvised weapon used to gain a shield bonus via the improvised defense trait count as a shield and makes him lose his Wis bonus to AC?
The idea is to use unarmed strikes and have something in one of my hands to get a shield bonus.

When wearing armor, using a shield, or carrying a medium or heavy load, a monk loses his AC bonus, as well as his fast movement and flurry of blows abilities.
Note it mentions using a shield, not gaining a shield bonus. So you should be fine with this situation. I am curious though if a Monk of the Open Hand uses a shield as an improvised weapon, does that count?

A bit of a derail, but what about a dwarven boulderhelmet? It counts as a weapon but is gives a bonus to AC against crit confirmation checks.
Not armor, can't even be enchanted as such. Monk's AC bonus is fine. It's like the equivalent of a monk wearing bracers or wielding a scizore.

Improvised Defense seems fine for a monk.
The real question is can you wield a real weapon as an improvised weapon?
What is the action to switch between normal and improvised modes?
I would assume something similar to switching grip from one hand to two (like a cleric using a quarterstaff kinda thing)-free action?

I believe so, yes. There's no good reason I can't use my wheel-lock pistol as an improvised club. I don't get to use any pistol-related goodies (unless they say otherwise) when I wield it that way, but that's the price you pay.
