I just bought and downloaded some PDFs from here, only to discover that I can't read them. I was able to read the ones I had before I switched operating systems a while back, but I now appear to lack whatever I had before. I cannot read my old PDFs, nor my new ones.
What do I need for PDFs from here, and where can I get it?

PDF file are opened using Adobe Acrobat Reader or the full version of Adobe Acrobat.
Google should set you up if you search.

I personally use Foxit. I like it better than Adobe Reader, and I'm certainly not paying for Acrobat.
But the problem sounds like you just don't have a PDF reader installed, since operating systems don't come with one packaged in and it's possible you just hadn't tried to open any other PDFs. There is no special program or anything required to view Paizo's PDFs.

Nitro is really nice (especially if you are wanting to extract maps for rescaling and printing), though it is paid software. Adobe Reader is a decent free solution.
And Claxon has the right of it. OSs don't have built in PDF readers, so if you dumped your old reader or had an older version that was not compatible with your new OS, that could be the root of your issue.

Adobe Reader doesn't come pre-installed with Windows 7 , so you'll need to download it. Which you probably figured out by now.
When you bought a computer with Windows installed, the vendor probably did that for you.
They will offer a free upgrade to Windows 10 if you purchased 7 or 8 within the past year.

I believe Nitro Pro uses the "free for a limited time, but then you need to buy it" model. So you get 14 days of free trial and then either $7.99/month (for the cloud solution) or $159.99 (for the desktop app). And to be clear, it is more that just a reader app.
The Nitro reader app (Nitro Reader 3) is free, but I am unsure about it's ability to extract images.
EDIT: Yep, the free reader version allows for image extraction.

As always, read the installation screens carefully. Some of them also want to install other stuff, so check / uncheck wisely.
