If the prestige class actually has a spellcasting progression of its own, with spells per day and/or spells known by level, then another prestige class could enhance that.
Mystic Theurge does not have a spellcasting progression of its own, so another prestige class (such as Arcane Trickster) could not enhance that. They would both enhance whatever base classes spellcasting progressions you have.

The answer is no. You cannot try to finagle dual progression of two spell casting classes by "enhancing" the "spell casting" of mystic theurge.
Arazyr has the right of it when he says that the mystic theurge does not have a spell progression of its own. It simply enhances the spell progression of two other classes. So another prestige class would not be able to select mystic theurge spell casting to enhance, because it does not exist.

They do not mention working on other prestige classes but also do not say that they are restricted to base classes. Ask your GM.
However, Mystic Theurge already loses too many levels for it to be worth losing another one.

I believe Exalted truly increases spellcasting like a normal PrC; Evangelist is the only odd one

You are correct. Sorry for mis-remembering and feeling too lazy to actually look it up.
Evangelist only, folks, and it loses one level of casting.

The problem with using Evangelist to go with Mystic Theurge is that level 11 of MT is undefined...at that point there are no class abilities to copy.
You and your GM could extrapolate MT pretty easily if you wanted, but if you were going to do that why not just let the class go past level 10 and not mess around with other PrC craziness?

Most likely, the only benefit of MT 1/Evangelist 10 would be BAB.
There's a chance a GM would allow MT 10/Evangelist X, but there's a lot of debate regarding this.
