I have a thought experiment I want to play out, even if its not the most optimized result. I want to swap or add wisdom to as many attributes as possible. I have the sensei monk to get wisdom to attack, monk of the four winds (i checked, it stacks with sensei)/elemental stances to get wisdom to damage when doing an elemental fist attack, monk gets wisdom to ac...and I think i remember hearing of at least one other swap.
Any forum goers know of anything swap/add wisdom dips I could take?

Check out this extremely useful document.
Two levels in inquisitor can get you Wisdom to everything and then some.
If you worship Irori, there's a religion trait, Wisdom in the Flesh, that lets you use Wisdom for one Str/Dex based skill (and makes it a class skill).

If you're adding one stat to as many different things as possible, does it even matter which stat it is? I suppose it would if there are certain stats that can't replace the function of other stats in certain circumstances, but I have to wonder-- do Captain Charisma and the Incredible Intellect actually play differently, or are they just two routes to the same end result?

WEll, my wisdom based character has also taken choices that lead to the "wise master" trope, preaching the benefits of self improvement. Captain charisma on the other hand, cant apply charasima to the same things, leading to a mechanically different character. If nothing else, captain charisma is probably pali/X, rather than monk/inquisitor.

I'd be interested in seeing a fleshed out effective build for that sort of wisdom based character.
I was looking at something similar using a level of cold iron warden inquisitor to get channeling to use guided hand and the wanderer monk to get another version of inspire courage based on wisdom while keeping flurry.

One thing you want to determine is how much you want to be about spells versus just using your wisdom. I have a wis focused build in PFS that is Monk 1/Druid 10 that is all about wisdom for spell casting, summoning and wildshape save DCs. He loses one caster level but his high wisdom helps make up for it and applying it to AC from the monk side really helps with defense.
Another build I would Suggest is Monk 2 Sensei, Warpriest 2 Sacred Fist Inquisitor 2, Sanctified Slayer with Conversion Domain.
This gives you Wis mod to:
To hit with unarmed strike and Combat Maneuvers
AC + CMD
2 + Wis Mod per day uses of Inspire Courage
Casting as a Warpriest, 1st level Spells
Fervor 1 + Wis per day
Knowledge Checks to Identify Monsters
Bonus to Initiative
Casting as an Inquisitor, 1st Lvl Spells
Use instead of Charisma for Bluff, Diplomacy and Intimidate
Race I like either Str/Wis race (Oread, Onispawn Tiefling) or Dex/Wis (Grippli, Plumekith Aasimar) or Con/Wis (Dwarf). Focus on either have a little str or dumping it and getting an Agile Amulet of Mighty Fists ASAP. Get Pummeling style and during combat enter style, buff with divine favor. Fates Favored is a great trait and going magical knack warpriest gives you a +3/+3 for a 1st level spell. Make sure to get some Pearls of Power lvl 1 for additional uses. Used Blessed Fist as another first level spell to buff your unarmed strike even further. As for Order I would go
