I think the primary inhibitions are lack of things to lose (cleric has very few class features, so it's difficult to add new goodies), and lack of gain (just a tiny bit of BAB for a loss of spellcasting).
Combinations that require more specific classes (like Battle Oracle), can give up specific extra class features to add new stuff, but a generic version just can't give the oomph needed to make it worthwhile.
This is also why Witch doesn't prestige as well into generic classes - they have too many class features to give up that aren't built into the assumptions of the classes. Would be interesting to see a Warlock prestige class that assumes Witch and some other specific class.

Eldritch Knight is a Gish-type character, able to both cast arcane spells and fight.
Divine Casters can be gish-type characters right out the gate, able to cast both divine spells and fight. E.g. the standard Battle Cleric, Oracle, or Warpriest.
In other words, several types of Divine Caster start out being able to do what an Eldritch Knight does. Thus, the niche is already filled, so there's no need for a divine version.
