After some research and reading, I decided that PFO is something I want to be involved in. So here I am, but....
I could use some background lore to read up on over the next few months. What I'm looking for is religion and deities, geography, what might be the history of this part of the world, etc. Books, links, blogs, etc. I don't care about the medium, I am looking for the data.
While I sat at both sides of the tabletop in AD&D, I have -zero- knowledge of the Pathfinder universe. My best guess at this point for background material that would probably translate into PFO is the "Pathfinder: Campaign Setting, The Inner Sea World Guide" book.
Any thoughts or guidance would be appreciated.

The Pathfinder Wiki is indeed the place to start, and the Inner Sea World Guide would be the best general book for an overview of the campaign setting.
Since you're interested in the area around where the MMO is taking place, I'd also suggest the Guide to the River Kingdoms (and possibly the Thornkeep book, though it's also an adventure, so it's not quite as lore-focused).
For religion and deity info, Inner Sea Gods would likely be your best bet.
I can provide more suggestions of which books are good if you're interested in learning more beyond that, but those seem like the best places for you to start.

+1 for Inner Sea World Guide. It is the go-to campaign setting book.
Gods and Magic is a good book for deities; it has 2 pages including a nice picture of each major deity of Golarion, and a paragraph for many other minor deities. The information is about half pertaining to the deity themselves, and half pertaining to how their clergy operate (areas of focus, rituals and common tasks, etc). There's a section at the back of the book with magic items specific to each major deity. I don't have Inner Sea Gods so I don't know how it compares.

The Inner Sea World Guide you mention is an excellent source. Of course, you can get it as a *.pdf or hard copy here on Paizo.com.
If you're looking for more of the overarching Pathfinder stuff, you can also look at the online PRD (rules) here.
I am an old AD&D GM/player also, I can tell you you'll LOVE Pathfinder. It is really, in my opinion, the fully evolved RPG that those "other" RPG games never quite got up too. If you can find a tabletop group to play, you'll really enjoy it!

The Inner Sea World Guide has an entire timeline of events, short histories of each region, a list of gods, and mentions of hundreds of shorter one-offs such as specific locations, artifacts, and demi-gods.
Easily the best place if you wanted a pretty comprehensive place to start, really easy to skim through as well.
