Best normal sized mount APs are Kingmaker, Jade Regent, and Wrath of the Righteous
Best AP for Small mount riders- All of them. As small you can take your medium sized mount anywhere everyone else goes. I recommend either a Dire Bat, Roc, or Giant Gecko Mount so you CAN go anywhere you want. Just a terrible size for trampling with your mount.

Wrath of the Righteous is not a good AP for a large mount. You'll spend the first two books trudging through dungeons, citadels and whatnot (that's as far as we've got). I play a paladin and was tempted to take the mount Divine Bond feature but most of the time even our druid has difficulties pushing his large wolf to the front line (he's dead now). Most of the challenging encounters are enclosed in tight spaces (large creatures would have to squeeze or would block other party members).
Kingmaker, on the other hand, is an excellent path for a large mount; virtually every encounter (except some boss fights) is outdoors. Our mounted cavalier, wild-shaped druid and his large AC have little to no trouble positioning during battles.

Kingmaker. However,while it is not entirely true that virtually every encounter is outdoors, many, many encounters are and there will be many randomly generated encounters that will nearly all be outdoors while exploring the wilderness.
There are some major aspects, however, that will not be great for large mounts.

The first book of wrath of the righteous isn't good for a mount but book 2 the citadel can hold a mount as it is a huge place. The rest of book 2 is iffy but with all the traveling a mount helps.Book 3 has a lot of open exploration. Later you willl be in citadel of demon lords and those are freaking gigantic.
All in all if you want to mount up your best bet is a small rider on a medium mount. You wont get to trample like on large mounts but you get access to mounts with flight and other abilities. You will be able to take your mount anywhere. early levels a war train giant gecko is 150 gold. You can even ride that on a ship and underground. At about level 5-7 you could switch to a Rock. Flyer with 80 feet and a grab ability. Grab and flight Is awesome. Grave a medium creature without flight and see how much fall damage you can inflict.

Having run a Kingmaker campaign with a Cavalier, the player found it exceptionally accommodating to her, there were certainly a few points where a mount wouldn't work but at a guess I'd say at least 80% of the game she was able to use it fully and to exceptional effect at many points, both in and out of combat.

Depends on how you play, Instead of magic items, i'll spend on commoner mercenaries to go into dungeons for me under my command. The most loyal are rewarded and the thieves are left out in the wilderness, exiled in dangerous lands.. Give the party 80% and the mercs 20%, because even 600 gold divided 60 commoners is pretty hefty for a day of work(for them), on top of encouraging them to strip mine the place after, renovating the dungeon and laying claim to it as a homestead for which they can invest in.
Basically this means dungeons are a cake walk and makes the open world our real adventure. Thus opening up mounted combat (And when the money comes in Mounted warfare :D)
and I mean IF something kills my commoners, then I've gotten the means to reduce my spending, and actually more loot. 60 pitchforks adds up nicely
Basically I encourage you to be a knight-captain and walk into any AP with that in mind.
Now i'd recommend getting monstrous mount or beast rider, so that you can leave your saddle and still have a potent animal companion.

Reign of Winter is pretty alright for a mount. I'm guessing Kingmaker is better, but Reign of Winter is on a very large scale. Many of the dungeons/buildings are really very very large.
We have a fighter who is on a large mount, and occasionally he has to walk on his own, but it hasn't been a huge issue.
