And the Cavalier with the beastrider archetype... just depends on how soon you want to be airborne =)

Mad dog barbarian. Starts with a critter at 1, lets you use boon companion right off the bat so you're not wasting higher level feats on it.

What is a 'role' anyway?

A waste of text. Basically, it tells you a race/class/archetype combination that fits the region, and takes up about half a page to do it.

Saber Company Marine:
Sable Company Marine
Hippogriff-Mounted Soldier
Specialty aerial support, cavalry, disciplined dragoon
Race human; Ethnicity Chelaxian
CLASS OPTION
Class paladin; Archetype shining knightAPG; Class Features divine bond (mount)
Class ranger; Class Features favored enemy (humanoid [human]), combat style (mounted combatAPG), favored terrain (urban), hunter’s bond (animal companion)
PREFERRED OPTIONS
Skills Handle Animal, Perception, Ride
Feats Mounted Archery, Mounted Combat, Point-Blank Shot, Ride-By Attack
DESCRIPTION
The marines of the exclusive Sable Company are among Korvosa’s most elite guards, answering only to the seneschal of Castle Korvosa and tasked with protecting the city from both domestic and internal harm. They don’t answer even to Korvosa’s monarch—should the monarch of Korvosa fall to corruption or reveal herself to be a tyrant, the Sable Company marines are meant to ensure that the despotic ruler causes as little damage as possible while the political logistics of her dethronement are sorted out. Sable Company marines are renowned far and wide for their skill in riding their favored mounts, expertly trained hippogriffs, and they practice extensively to fight both in the air and on land with these magical beasts.
ROLEPLAYING
Roleplaying loyal to comrades, puts duty first, respects law
Preferred Alignment any lawful; Preferred Mount hippogriff.

Sylvan Sorcerer or Lunar Oracle - works best with Boon Companion though.

Lunar Oracle can only choose from "bear, boar, crocodile, shark, tiger, or wolf" -- so no flying companion there.

Lunar Oracle doesn't have any choices for flight without the Beast Rider feat, unless I am missing a way that a bear, boar, crocodile, shark, tiger, or wolf could fly. It's a little interesting that the Lunar Oracle lacks 2 of the were-creatures in Blood of the Moon, namely bat and rat, both of which have dire animals on the druid animal companion list.

Or Summoner. Especially if you want a mount that's more than decently combat capable.

or just be a Summoner and make your own mount (mine just hit 16.2 in PFS).

I don't know what 'optimal' is for you - but I have enjoyed my PC's progress.

Play a Nagaji-make sure you speak Draconic...jack up your charisma and diplomacy. Talk to a wyvern-after you've thrown it a healthy side of beef-using your hypnotic gaze. Hope it doesn't sting you.

One other option I just remembered, although it's only valid for Seeker-level play:

Empyreal Knight paladin.

Quote:

Divine Bond (Su)

At 5th level, an empyreal knight forms a bond with a mount, as the standard paladin ability. Her mount gains the celestial template at 8th level. At 12th level, her mount sprouts wings if it cannot already fly, and gains a fly speed of twice its land speed and good maneuverability. If the mount could already fly, its fly speed and maneuverability improve to at least this level.

This ability otherwise functions as the paladin ability of the same name.

I think there is another option, although it is a little odd and limited:

Ebony Fly figurine, and there is a feat that allows its use as an AC-like companion, I think the feat is in Classic Treasures Revisited, and I think it may be PFS legal.

Companion Figurine, and yes it's PFS Legal. It doesn't get a fly speed until 8th level, though, and you have to also have the Vermin Heart feat to take it.
