I'd consider running the AP, but I should point out that I'd actually be more inclined to run it in a different system than in Pathfinder. Probably Legend (formerly Mongoose RuneQuest 2), mostly because I like my combat brutal, and because the combat runs nice and quick (a really important thing in a pbp since it's usually the combat that drags such a game down.

Relatively easily. You have seven abilities instead of six, but six of them map directly to the six classic D&D abilities, and the seventh (size) is fairly easy to approximate. I'll need to get the various religions turned into Cults (each religion in Legend offers different divine spells based on the god's portfolio), but beyond that, it's just a matter of adjusting skills and BAB into d100 style skills. The way I've been doing it is to add the BAB to 10, then multiply the result by 5, then add STR and DEX straight on. This typically makes the mooks vaguely competent and the named characters potentially dangerous.
I wouldn't necessarily require a character sheet up front (though people are welcome to create them), because character creation is simple enough for me to walk people through. Mostly it boils down to pick a race, roll/point buy your abilities (if rolling, what you roll depends on the race), pick a culture (starting gold and some common cultural skills), pick a profession (some more skills, including advanced skills), buy skills (whatever skills you want, to a maximum of 70% when starting out).

Yeah, I just found the book (free) and it looks, frankly, badass based on my quick overview. If there are enough players who'd be willing I'm totally sold on Legend (I know you said you'd only consider it).

Still, the system is incredibly simple, but has depth to it. No classes or levels; just abilities (STR, CON, SIZ (size), INT, POW (Power, which maps to WIS), DEX and CHA), skills and, later on, heroic abilities. Critical hits are nasty, and either a shield or a two handed weapon is often a good investment for characters wading into melee in order to be able to effectively defend against attacks.

That's actually the main rulebook. Monsters of Legend is required for other races and monsters, but it's otherwise pretty good. Definitely worth it for a dollar.
Edit: Also, I have books for weapons that aren't listed here, and even the ones that Paizo introduced should be easy enough to port over (keep damage as it is, use similar weapons for the other stats).
