hey guys
so my question is this:
when it states a monster has a melee att bite and 2 claws ( barghest)
does this meen that every round the monster has all 3 attacks as a standard action, or does one just pick one of these 3 attacks?
And if the latter, does it get to make all 3 attacks on a fullround action?

As a standard the enemy can choose one of the attacks (Bite, Claw, claw), and as a Full Round Attack, yes, even with a 5-foot-step in there, he can do the full Bite, Claw, Claw.
Think about humans, we have
Headbutt, kick, kick, punch, punch, but we can't use all of them unless we full round attack the mugger we are running away from because he'd an expert, and maybe level 2 or 3, and we are level 1 commoners.

That Barghest was mean. It has all 3 attacks as a full-round action. It only gets one of them if it moves I believe. It'll likely Bite as it's typical standard action though.
