there are several things to consider .. and several options available to you

1) Cast Defensivly - Make a Concentration Check(Caster level+Primary Stat) of DC 15+ twice the Spell Level this avoids the AoO completely if successful ... if you fail to cast Defensivly you loose the spell

2) take the AoO - you dont cast the spell Defensivly and Provoke an AoO, if the AoO hits you make a Concentration Check (Caster level + Primary stat) against a DC of 10 + Spell Level + Damage Taken if you fail the concentration Chec ... you Loose the spell

also note there are Feats and Traits and even Items that can boost your concentration Check

Full Round Casts (Sleep, Dominate person, Summon Monster) you end up making Multiple Concentration Checks for each set of Damage taken

My casters have been known to intentionally provoke an attack of opportunity with a move action (retrieve a stored item, sheath a weapon, or simply move), take the hit, and then cast the spell praying my opponent doesn't have combat reflexes.

If you cast defensively, you don't provoke even if you fail the roll; you just lose the spell. (Unless your attacker has taken the Spellbreaker feat.)

Also: firing a ranged touch spell provokes an AoO. This is in addition to any provocation while casting and can't be avoided by casting defensively.
