What Fighter/Barb/Pallie/Ranger/Cav archetypes would you say would be good to take into the Egyptian deserts of Osirion? I reckon there're mummies to fight....
Invulnerable barbarian would my pick. What is hot? What is pain? Fantastic fortitude too.
Of course, if you want to flavor or fluff anything its probably best to do that after you pick the class you want. Its easy to describe your dress and garb as one fitting a location for instance.

As flavorful as it gets.
Edit: I didn't read that closely. I do still think you should go for this prestige class. As for base classes, I cast my vote for Unbreakable Fighter.

well, there is the dawnflower dervish (or was it some other name? it gets so confusing with all the dervish things. anyway, same name as the bard archetype) It has the advantage of getting a pseudo-pounce ability at level 11 (trades away highest BAB attack for the rest of the full attack and a single move). Sadly, this trades away armor training, but you do get to ignore 10 feet of difficult terrain (stacks with other such abilities) and less penalties while charging. Otherwise it is like a normal fighter.
Invulnerable rager barbarian is also a good choice since they naturally go with nomadic tribes, and you would have a legitimate reason to pick the hot climate version of endure elements and scaling fire resistance at level 2.

fighter: dervish of dawn (or Dawnflower Dervish originally) dual wielding kukris; a gladiator with a signature weapon (like a rare exotic weapon, or a net/1hander combo).
barbarian: mad dog with a desert-y companion (like a lion or giant scorpion) and a falchion; or a mounted fury with a camel that switch hits between mounted archery and a falchion.
pally: sacred servant of sarenrae with a scimitar and fire/light magic (maybe even pick up unsanctioned knowledge feat); warrior of the holy light with a courageous falchion.
ranger: guide with desert bonded terrain and 2WF style (scimitar and kukri).
cavalier: beast rider- basically like mad dog barb; emissary with a camel- basically like mounted fury barb
and, as others have mentioned, you can take just about anything and flavor it for the setting... for example- a two-handed fighter with a falchion or two weapon warrior with scimitar/kukri, or a ranger with favored terrain [desert] and an appropriate AC would all fit in really well too.

Dervish of Dawn, a fighter archetype, might be good.
If you don’t mind giving up 1 point of BAB, four levels of Ninja or Rogue with the Scout archetype is good. A Scout’s foe is always flatfooted when she charges. For your point of BAB you get 2d6 of sneak attack damage and an opponent that is denied its DEX bonus to AC.
When a third-level Dervish of Dawn charges, the charge penalty to AC is reduced by one.
There are Ninja Tricks that give you Improved Unarmed Combat and a Style Feat. Janni Style reduces your AC penalty on a charge by one and flanking opponents only get +1 against you rather than +2. Admittedly, most Ninja players would be reluctant to not take Vanishing Trick as one of their Ninja Tricks.
This is a bit of a stretch, but you might want to take one level of Urban Barbarian. Crowd Control gives +1 to attack and +1 to AC when adjacent to two or more opponents. (If you were playing PFS, the Taldor faction has the Expert Duelist trait: +1 AC versus a solitary foe.)
Thanks,
Kodger
Edit: It's Dawnflower Dervish not Dervish of Dawn, which is what d20pfsrd.com calls it because it isn't allowed to use names from Golarion.

I could easily see an undead scourge paladin at work in the Osirionian Desert, either homegrown or sent there.

I thought Osirian revered the dead? Or something to that effect?

Dead =/= Undead. Pharasmans in particular, a major Osirioni sect, loathe the UNdead.
Geb is ruled by a bunch of Undead that in fact 'farm' humans for feeding.
There's a Ghoul Underdark city below Osirion that presumably snatches humans from the surface from time to time.
They don't really have any reason to be lovey dovey with Undead.
They respect and honor their dead anscestors like just about any other society.
I don't really think Osirionis loathe Undead any more or less than most cultures, since they're pretty universally feared/reviled, and Pharasma also is much more widely spread than just Osirion, but there just seems to be more Undead in Osirion and it's region, so they need to deal with it more. That's why an anti-Undead character makes sense, because it's engaging in that trope.

That's what got me thinking of the undead scourge, where the undead are plentiful there is no shortage of work for an undead hunter. When a wizard goes insane from too much what man is not meant to know and starts casting canopic jar on the townsfolk, to fix things you have to call in an Undead-Scourge.

I know it doesn't sound like it answers the question, but the Dervish Bard is actually better than full BAB, since he gets double the song bonus, at any given level, his bonus to hit will be better than the fighter's.
And it is VERY deserty
Just a thought.
Well, that is something to consider, I suppose. They do lose out on some power attack since they aren't truly full BAB, but get it back through the dance. Easier to get arcane strike too, I suppose. TWF is actually a better style than dervish dancing for a high level dawnflower dervish, because of those bonuses are on every hit (practiaclly the prerequisite for a good TWF build).
Nothing to really help them accomplish TWF full attacks though (some fighters have pseudo pounces, TW-warrior can use both weapons as a standard action, brawler can lock opponents in, ranger can use his animal companion to trip or grapple opponents, etc)
I think there is some concern about CMD though. If you are grappled, you can't very well dance, and you do not actually have a full BAB and you likely dump STR.
