dose this mean that it is like craft anything 1 rank is = to 1 in all crafts. or pick one?

For Classes Yes... for Craft Skills no... although I understand what you meant because other skills are worded poorly,ect..
You are skilled in the creation of a specific group of items, such as armor or weapons.
Like Knowledge, Perform, and Profession, Craft is actually a number of separate skills.
You could have several Craft skills, each with its own ranks.
The most common Craft skills are alchemy, armor, baskets, books, bows, calligraphy, carpentry, cloth, clothing, glass, jewelry, leather, locks, paintings, pottery, sculptures, ships, shoes, stonemasonry, traps, and weapons.

I understand that what I dont get is why it stats anything different. Every other class is "Craft" ware the alchemist is "Craft(Any)". Basicly all im asking is was it intentional on the part of the creators to say the alchemist is just a bad ass crafter getting all crafts at once or just forget about it any treat it the same as every other class. The example someone used earlyer is the wizard and the summoner theres says "Knowledge(all)" idk if that has changed in 3.0-3.5 to pathfinders but the bard got "Knowledge(all)" and that meant they got every knowledge posible with one skill.

Are crafted items carried over to subsequent scenarios, or do they go away after each PFS group completion?
More brand new player questions: the Core book refers to "...a craft check representing one week's worth of work". What is the "week" it refers to? What "work"? Can an item be crafted BEFORE starting a group scenario at a convention , so it doesn't bog the scenario down for the rest of the group?

I may be remembering this wrong, but is it that crafting feats are not allowed? Or crafting items overall?
If you can craft, it would carry over. The week it refers to is 7- 8 hour days worth of work, or progress towards completing an item. So if an item took 50 hours of work to complete, it would take 1 week (40 hours) 1 day (8 hours) and 2 more hours.
Any crafting or profession rolls would be made at the end of a scenario, with the GM present to verify the roll. Similar to everyone rolling a profession check at the end of a session to see how much money they got from their professions during that week.

Neither the craft feats nor the item creation section of the magic items chapter in the Core Rulebook are legal for play. Additionally, except for specific examples cited in this guide or the Pathfinder Society FAQ, crafting of mundane items is not allowed in Pathfinder Society.
How can alchemists craft in Pathfinder Society Organized Play?
Alchemists can use the Craft (alchemy) skill to produce items with their Alchemy ability. Follow the Craft rules on pages 91–93 of the Pathfinder RPG Core Rulebook as well as in the alchemist’s Alchemy ability description. Any item created must be properly noted on that scenario’s Chronicle sheet. Under "Items Bought", note the amount of gold spent and the item created. Alchemists are assumed, for Pathfinder Society Organized Play, to carry the necessary items and tools with them to use available resources to create alchemical items. If they have a base of operations from which to do so, they may use an alchemy lab to gain the +2 bonus on their Craft (alchemy) check. Alchemists may never sell any of their created items nor may they trade them to another PC. However, they may allow other PCs to borrow or use items they’ve created (so long as the alchemist class ability being used allows them to do so).
That's the only situation where actual crafting is allowed, but there's several other cases (Gunsmithing and Bonded Items) where you get the discount as if you had crafted it, but you don't need to bother with the crafting rolls.
