The Giant Crab Spider doesn't seem to have its camouflage ability explained, but all other monsters in the Bestiaries do have an explanation for their camouflage ability.
(At least as far as I saw. I did a search for "Camouflage" on PDF copies of those books.)

The camouflage ability does completely different things for all the monsters that get it. So I doubt there is a way to determine what the spiders version is supposed to do, unless a developer decides to answer.
