So I'm building an Ifrit character and this question popped into my head, does an Ifrit's fiery hair provide illumination? Does it burn? Can you damage something with it? If they die does it go out? How can you cover it up? Will my party members try to use my character's hair as a cooking fire? What happens if an Ifrit goes underwater? So many questions.

It depends... does your character have some of those permanent flaming ink tattoos? If so, between those and the hair, you may have the rest of the party throwing water on your character to extinguish you.
I'd agree with Are. Base rules wise there is nothing that says you actually produce heat or light with your hair, it just "moves" like flames.

As a PC I'd be wary of saying my head glowed in the dark without any ability of mine to put it out- and "your head glows like a torch" is saying exactly that.
Sounds neat in the daylight- not so neat at night or in a cave when folks are trying to be neaky.
"hey lightbulb, wear a sack or something".

I did a fire based custom race for the game I am playing now. I gave the race the spell like ability Continual Flame 1/day. As part of the write up for the race I made it as a special rite of passage for the race so that when they reach adulthood the rite allows them to use their continual flame on them self. As a result the Inferne (thats what I call them) once they reach adult hood have continual flame on their hair.
