Basically, can you cast the first spell normally, then the other two from the astral copies of the scrolls, without using up the originals?

Per the RAW, yes you can. But considering your real body takes two negative levels if the astral copy gets destroyed, and scrolls get destroyed in their use...

Do you really want to allow your GM the chance to decide what negative levels on scrolls might do, in his game? Or what an "astral demiplane" might be like?

Well, according to RD, the scroll is not destroyed:

"The writing vanishes from the scroll when the spell is activated."

Besides, talking about scrolls with negative levels is a category mistake ;p, since only living things can get energy drained.

No, the scroll is not destroyed, only the magical writing is. You are left with paper (or whatever other material the magical runes were inscribed upon).
