Thinking about this, perhaps when taking Improved Familiar. Or is it better off taking Leadership?

It depends in large part on your DM's attitude towards the leadership feat, and how much control (or not) you get over the exact mount you get.
A witch's best mount may be her broom (or cauldron, if you go the Baba Yaga route) anyhow.

I would probably not want to ride it into battle, lest someone stick a sword in it, burn it, disintegrate it, eat it.. well- you get the idea.
I'd go with either leadership or talk to the Dm about getting/finding a decent mount.

It makes more sense to be your familiar's mount yourself.
You could do it, but it's risky.
Balance it with things like the ward hex, barding (or mage armor), and the mounted combat feat.
That said, mounted spellcasting is a powerful way to go. Move and cast, hurrah!
Have a plan for places mounts are normally not allowed, like the royal palace or the cliff face.
I don't think it is a terrible idea, but using core races you would need a medium familiar.
It would need some investment to make it durable, making constitution a fairly important stat for you to increase, toughness more appealing, familiar evolution feat might help alot too.
