I own every hardback Pathfinder book there is to own. Now I'm looking to expand into the supplemental paperbacks. What, in your mind, is REALLY worth having? What do you feel are the "must haves?"
I'm particularly interested in crunch, material that can be used (archetypes, feats, magic items, prestige classes, spells, etc.).

The Cheliax Companion. Though finding a print copy can be difficult, which is probably why my friends whine that I won't sell any of my copies to them.

Of the Pathfinder Campaign Setting/Chronicles series (mainly for GMs), Inner Sea Magic has a lot of crunch. Other good ones include Seekers of Secrets, Gods and Magic, the Faction Guide, and maybe the Books of the Damned.
Obviously, the guide to any region in which the campaign is active will be useful (mostly for setting needs). The various city and dungeon books are also more setting-related. Depending upon the monsters that you want to use, the monster books can be good (warning: apparently the Dragon book is somewhat "out of synch" with the rest of Golarion and the final version of PF dragons).
The Player's Companion series is more spoiler-free, but generally contains useful crunch.

@RD: Avoid any of the revisited line. They're all GM-oriented, and as I recall you're primarily looking for player material.
The biggest bang for your buck will be in the Pathfinder Player Companion line (though the earlier volumes are just Pathfinder Companion; they changed the name in 2010).
As for which ones specifically? Personally I'd avoid the Adventurer's Armory; it has known issues, some of what's in there has been errataed and replaced, and Ultimate Equipment is coming out later this year. According to my records, the full line is:

Typically the race-based ones are mostly good for that race, though some have new spells. You might not be interested in the Humans one; as I recall there's virtually no new mechanics in it. The Faiths ones are usually best for clerics, etc.
The Inner Sea Primer, if I recall, pretty much just has traits. On the other hand, the regional sometimes don't require you to be of that region - those are probably your best bet. Be careful, some of the early ones are 3.5e and not Pathfinder.
I'd have to take a look to see if any of the Chronicles/Campaign Setting books would be good for you; they're typically GM oriented.
