What happens to these when they die? Do they just seem like a regular body? Or is it apparent that they are a double?
I was just looking at a published adventure featuring a simulacrum.....upon destruction they reveal their true form to be that of a statue of ice and snow and melt away.
Unless it's an alchemical simulacrum - then it becomes a heap of meat.

When a simulacrum dies, it melts into a pile of snow; this is actually covered specifically in the text of the spell's description (second to last sentence)."
