The new reskinning rule only references AC/Mounts and items.
I'm not sure that vanities would count as items, and they're clearly not AC/Mounts. Not even the caravan! :D
I'd think that there's an argument to be had to extend no-reskinning to vanities, but I hope not. I mean, what's the big benefit to giving the chance for Profession:Barkeep or Profession:Scribe to get +1 to day job checks when others can't spend the same PP for the same benefit?
I suppose if free reskins would be allowed you'd have potential abuses such as 'improper' professions such as Profession: Sith Lord and his reskinned vanity described as 'not being a moon' in some pocket demi-plane.. But still feels awful random and partial for Profession and Perform skills to be listed as haves and have-nots. Doubly so since the Craft vanity works on any craft skill, not just 1 or two explicity specified.
Here's to hoping more vanities come at a steady (if slow) trickle from the faucet of Paizo dev's production desk :)

Yeah, my baker was pretty bummed to discover that barkeepers could get a Tavern to boost their Day Job rolls but he couldn't.
I'm considering getting it anyway (the other benefit isn't dependent on Profession: Barkeeper) and calling it a bakery (being a bakery and a tavern are not mutually-exclusive; it's just a tavern that specializes in baked goods).

Many of the vanities already call for a bit of creative expression. Did you buy a ship? Give it a name! Did you join a temple? To which deity is it dedicated? Did you hire a porter? Give him a name, and tell us where he's from. Did you purchase a coastal island? How many palm trees are growing on it?
Whether or not vanities count as items is a valid question. I would err on the side of "no" unless a vanity is a direct substitute for another PFS-legal item (read: Wayfinders).
Because vanities rarely contribute to the main action of a scenario, I don't see much to fuss about if somebody wants to personalize his estate in Taldor (it's made of brick and has two stories) or claim that her chronicler is from Varisia. There's almost no chance of staying in your estate or your chronicler playing any part in combat or negotiations, so a bit of customization should not offend most GMs. Even so, I would try to adapt your idea to overlap with the vanity's entry as written as much as possible. The idea of the tipsy bakery/tavern is pretty hilarious, and I could see the Scrivener actually specializing in forged documents; combine that with the Sczarni "Front" boon for added chuckles.
Just try not to have a seneschal who's secretly a clockwork were-owlbadger who moonlights as the lich he actually is. Avoid having him watch over your estate with solid gold walls built on the planet Eox. Please avoid having your coastal island be the sole portal to a private demiplane.

Looking at the Tavern in particular. I don't see why you couldn't say its a bakery or whatever. The problem is it still would only give the benefit to Profession (bartender). Reskinning anything doesn't let you change the rules behind it.
A Tavern by any other name (or look) is still a Tavern.
Hence my baker's sadness. :(

It isn't so much "Re-skinning" in this case as it is wanting another profession-related vanity. I myself was sad that Cook didn't get one.
