It seems the spell in question can only have a single target. Do spells like scorching ray qualify (if used with close range)?
I've seen other people talk of using it, having 1 ray be expended with each swing of the sword or some such.

Save that Scorching Ray can't work that way. All of it's rays have to be fired off at once it is an instantaneous spell not a barrage spell nor one with a duration. Scorching Ray also can not work as it is a Ranged spell that uses a touch attack, not a touch spell.

Though your other points are likely valid, I specifically said that Close Spell was being used, which makes the ranged nature of the touch spell moot.

The way I read the ability a Scorching Ray would deal the complete damage if the Spellstrike hits.
An interresting question would be spellstike works with something like chill touch and Calcific Touch. You can certainly use Spellstrike to cast the spell and try to deliver it with a swing of your weapon, the question is if you can continue to deliver the touch attacks in the following rounds with your weapon.
Since Calcific Touch is so popular, it would be good to know considering that a successfull critical hit with a scimitar would inflict 2d4 or 8 dexteritydamage if you use you maximize arcana.
